Also known as the knuckles, the Carpus is more of a knee joint.
Some chefs say the meat found in the lobster’s knee joint is the tastiest of the lot!
SHARED VALUES
Any extra ingredients we use are sourced responsibly from local suppliers that share our values on sustainability, and our food comes in recyclable packaging, made from recycled materials where possible.
EVERYTHING ELSE THAT ISN’T SHELLFISH!
We make a big effort to ensure all our products align with these values, and we want to support and buy local wherever we can. Our amazing brioche rolls are fresh from Phoenix Bakery in Inverbervie and our fresh vegetables and herbs all come from local traders Turriffs of Montrose who in turn work closely with local farmers.
We will venture a little further afield if it’s the right product. We all think the Blackthorn salt and the range of Mara seaweed are the perfect accompaniment to our lobster.
You can be assured that every wonderful item purchased from The Lobster Shop has been sourced responsibly from local businesses that think like us. In fact, even your bag, pot or box is recyclable, and where possible it’s been made from recycled materials.
